Paneer Bhuna Tikka

    Rich with caramelised onions, hung curd and aromatic spices, this Paneer Bhuna Tikka is air fried until beautifully charred. Finished with fresh coriander and lemon, it's best served with green chutney.

    Function Used: Air Fry Mode
    Serves: 3 to 4

    Ingredients

    • ¼ cup Oil

    • 2 Large Onions, sliced

    • 2 tbsp Garlic, chopped

    • 1 inch Ginger

    • 1 Green Chilli

    • 1 tbsp Roasted besan

    • ½ cup Hung curd

    • 1 tbsp Mustard oil

    • 2 tbsp Kashmiri chilli powder

    • ½ tsp Turmeric powder

    • 1 tsp each Chaat masala, Ajwain & Roasted cumin powder

    • 1 tbsp Kasuri Methi, crushed

    • Juice of ½ Lemon

    • 1 tsp Garam Masala

    • Salt, to taste

    • Fresh Coriander, finely chopped

    • 300 g Malai paneer, cut into large cubes 

    • Wooden Skewers, soaked in hot water for 30 minutes

    • Butter, for basting

    To Serve

    • Green Chutney

    • Lemon Wedges

    Method

    1. Heat the oil and fry the onions until golden, adding the garlic during the last minute. Cool slightly, then blend with the ginger and green chilli into a smooth paste.

    2. Combine the hung curd, roasted besan and onion paste. Warm the mustard oil, stir in the Kashmiri chilli powder, then add it to the curd mixture.

    3. Add the turmeric, chaat masala, ajwain, roasted cumin powder, kasuri methi, lemon juice, garam masala, salt and coriander. Mix well.

    4. Coat the paneer pieces evenly with the marinade making sure it does not break and refrigerate for 30 minutes.

    5. Thread the paneer onto the soaked skewers.

    6. Preheat the Marvel Oven on Air Fry Mode at 200°C.

    7. Lightly grease or line the mesh tray with parchment paper. Arrange the skewers in a single layer. 

    8. Place the Mesh Tray on the middle rack and Air fry for 10 minutes, turning halfway and basting generously with butter until charred.

    9. Finish with lemon juice, chaat masala and fresh coriander. Serve immediately with green chutney.

    Marvellous Tip - Handle the paneer gently while coating it with the marinade to prevent it from breaking.
