Enamel is extremely durable, but like all glass-based coatings it can chip if dropped or subjected to sudden temperature shock. With normal use and care, it will last for decades.

Can I preheat the pan empty?

Yes, but always preheat on low to medium heat. Avoid high heat on an empty pan to protect the enamel surface.

Can I put it straight from fridge to oven or flame?

No. Avoid thermal shock. Let the cookware come to room temperature before heating.
